Ingredients
- 2 eggs
- 2 ripe bananas (peeled and wet)
- Cinnamon to taste
- 2 tablespoons of coconut oil
- 1 teaspoon of baking soda
- Cocoa powder to taste
- Honey or sweetener to taste
Preparation
- Separate the egg whites and yolks.
- Whisk the egg whites until stiff peaks form.
- Blend the egg yolks with the bananas and coconut oil.
- Transfer the mixture from step 3 to a bowl and gently fold in the egg whites, cocoa, baking soda, cinnamon, and honey using a whisk.
- Grease the pan and pour in the mixture. Cook over low heat on both sides.
- Approximate cooking time is 10 minutes per side, or until fully cooked.
