Cauliflower Fried Rice Recipe

Prepare this delicious cauliflower stir-fry with shredded chicken, broccoli, carrots, and purple cabbage, seasoned with coconut aminos and sesame oil, and finished with fresh cilantro and sesame seeds. A healthy and flavorful option!

Ingredients

     
  • 340 grams of cauliflower rice
  • 1 shredded chicken breast
  • ½ white onion, diced
  • 1 grated carrot
  • 2 crushed garlic cloves
  • 1 small head of broccoli, chopped into small pieces
  • 1 cup of purple cabbage, thinly sliced
  • 2 beaten eggs
  • 4 scallion stalks (both white and green parts)
  • ¼ cup finely chopped cilantro
  • 1 tablespoon sesame oil
  • 3 tablespoons coconut aminos
  • Salt to taste
  • Black and white sesame seeds to taste

Preparation

  • Heat a pan over medium-high heat with a little olive oil and sauté the onion, garlic, and scallions.
  • Next, add the broccoli and stir-fry.
  • Add the beaten eggs and mix well.
  • Add the shredded chicken, carrot, purple cabbage, sesame oil, coconut aminos, and salt to taste.
  • Finally, add the cauliflower rice. Cook until it thaws.
  • Remove from heat, add cilantro and black and white sesame seeds.
