Delicious celeriac and cassava fritters, crispy on the outside and soft on the inside — perfect to pair with your breakfast and a protein of your choice.

Ingredients
- 8 medium-sized pieces of celeriac or arracacha, chopped
- Cassava flour to thicken
- 2 egg yolks
- 2 cups of honey (optional)
- 2 cups of water
- 2 cloves
- Salt to taste
- Coconut oil
Preparation
- Mix the cloves with the honey.
- Boil the celeriac or arracacha for about 12 to 15 minutes.
- Drain and mash until smooth.
- In a bowl, combine the mash with the egg yolks and 1 to 2 cups of yuca flour.
- The dough should be soft, moldable, and not sticky.
- In a deep pot, heat enough oil to fully submerge the fritters.
- Using two spoons, shape the dough into small balls and fry until golden brown on both sides.
- Place on a strainer to drain excess oil.
- You can serve them with the clove-honey syrup, on their own, or as you prefer.
