Ingredients
- 2 eggs and 1 egg white
- 1 cup chickpea flour
- 1 cup coconut milk
- 3 ripe bananas
- 6 tablespoons cashew butter (or cashew/merey/anacardo butter)
- 3 tablespoons stevia-type sweetener
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 2 tablespoons grain-free baking powder
- 1 teaspoon baking soda
- 3 tablespoons buffalo or goat Greek yogurt
Preparation
- Mix all the ingredients until you get a smooth, uniform batter.
- Bake in the oven for 25 minutes.
- Top with chopped peanuts for decoration.
