Ingredients
- Bell pepper
- 1 small eggplant
- 7 mushrooms/shiitake
- 100 g lettuce
- 100 g buffalo cheese
- 1 sprig of parsley
- Olive oil
- Balsamic vinegar
- Salt
- Sliced toasted almonds
Preparation
- Roast the bell pepper in the oven to soften it. Then remove the skin and seeds, and cut it into strips.
- Chop the eggplant into small cubes, add salt, and roast.
- Chop the mushrooms/shiitake and sauté them in olive oil.
- Chop the lettuce and parsley, and cut the cheese into cubes.
- Place everything in a salad bowl and mix.
- Dress with olive oil, salt, and balsamic vinegar, mix again, and finish with a sprinkle of toasted sliced almonds.
