Ingredients

     
  • Bell pepper
  • 1 small eggplant
  • 7 mushrooms/shiitake
  • 100 g lettuce
  • 100 g buffalo cheese
  • 1 sprig of parsley
  • Olive oil
  • Balsamic vinegar
  • Salt
  • Sliced toasted almonds

Preparation

  • Roast the bell pepper in the oven to soften it. Then remove the skin and seeds, and cut it into strips.
  • Chop the eggplant into small cubes, add salt, and roast.
  • Chop the mushrooms/shiitake and sauté them in olive oil.
  • Chop the lettuce and parsley, and cut the cheese into cubes.
  • Place everything in a salad bowl and mix.
  • Dress with olive oil, salt, and balsamic vinegar, mix again, and finish with a sprinkle of toasted sliced almonds.
