Scallion and Buffalo Cheese Scones Recipe

Ingredients

     
  • 1 ⅓ cups buckwheat flour
  • 1/4 cup cassava starch (yuca starch)
  • 1 ½ tablespoons olive oil
  • 3 tablespoons ground flaxseed
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 3/4 cup warm water
  • 1 scallion, chopped into small pieces
  • 40g grated buffalo hard cheese (can be replaced with another ingredient)

Preparation

  • In a bowl, mix all the dry ingredients (flours, salt, baking soda).
  • Make a well in the center and add the oil, vinegar, and warm water. Mix with a silicone spatula until all ingredients are combined.
  • Knead until a dough ball forms and let it rest for 5 minutes.
  • Add the scallions and cheese, then knead again until fully incorporated. Let it rest for another 5 minutes.
  • Place the mixture on a greased baking tray and form a circle about 2 cm high.
  • With a wet knife, cut into 6 or 8 pieces.
  • For the glaze, beat the oil with water until it forms a creamy mixture and brush it over the dough.
  • Bake at 180°C (350°F) for 45 minutes. If you want them more golden, bake for a few more minutes.
