Sweet Potato Brownie Recipe

Make some delicious sweet potato and chocolate brownies with a hint of coconut that will make your mouth water.

Ingredients

     
  • 1 sweet potato (270g, steamed and peeled)
  • 3 eggs, beaten
  • 40g clarified butter or coconut oil
  • 90g honey
  • 100g 80% chocolate
  • 3 tablespoons coconut flour (27g)
  • 2 tablespoons cocoa powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • 1/2 teaspoon
  • A handful of walnuts (optional)

Preparation

  • Preheat the oven to 180°C (350°F).
  • Mash the sweet potato and let it cool.
  • In a pan over low heat, melt the butter, then add the chocolate. Stir frequently.
  • Once melted, add the honey, mix well, and turn off the heat.
  • Beat the eggs and gradually add the coconut flour, letting it sit for a few minutes to allow the coconut to absorb the liquids.
  • In a large bowl, mix the cocoa powder with the remaining dry ingredients and the sweet potato.
  • Add the coconut mixture and stir again.
  • Add the melted chocolate and pour the final mixture into a greased brownie pan.
  • Bake for 30 minutes.
