Ingredients
- 1 sweet potato (270g, steamed and peeled)
- 3 eggs, beaten
- 40g clarified butter or coconut oil
- 90g honey
- 100g 80% chocolate
- 3 tablespoons coconut flour (27g)
- 2 tablespoons cocoa powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- Pinch of salt
- 1/2 teaspoon
- A handful of walnuts (optional)
Preparation
- Preheat the oven to 180°C (350°F).
- Mash the sweet potato and let it cool.
- In a pan over low heat, melt the butter, then add the chocolate. Stir frequently.
- Once melted, add the honey, mix well, and turn off the heat.
- Beat the eggs and gradually add the coconut flour, letting it sit for a few minutes to allow the coconut to absorb the liquids.
- In a large bowl, mix the cocoa powder with the remaining dry ingredients and the sweet potato.
- Add the coconut mixture and stir again.
- Add the melted chocolate and pour the final mixture into a greased brownie pan.
- Bake for 30 minutes.
