Ingredients
- 100 ml of oil
- 1 egg
- 120 g of xylitol (sweetener)
- 1 tsp of vanilla extract
- 120 g of Orinocense flour
- 1 tbsp of coconut milk
- 120 g of cassava flour (optional – you can use more Orinocense flour instead)
- 1/2 tsp of baking soda
- A pinch of salt
Preparation
- Place the oil, xylitol, vanilla, and egg in the blender.
- Blend well until the mixture is smooth.
- Add the Orinocense flour and coconut milk.
- In another bowl, mix the flour, baking soda, and a pinch of salt, then stir.
- Combine both mixtures gently with a spatula until a manageable dough forms.
- Lightly oil your hands to make handling the dough easier.
- Place small dough balls onto a greased baking tray, leaving space between them.
- Once all balls are placed, gently press them down with your fingers to shape them into cookies.
- Bake in the oven at 180°C (350°F) for 15 minutes or until they are crispy and soft.
